Out of this World - Shyira

Milk & Beans' fifth iteration of Out of This World. For this edition, we return to funk!

Very vibrant is where we are sitting this time round, with notes of Strawberry Syrup and Violet.

We got in touch with our good friends at Raw Material, to source something fit for the job. They pointed us in the direction of this beautiful lot from Rwanda.

Here, we see our first lot that has undergone Raw Material's Anoxic processing technique. This is a fermentation where the cherries are placed in a deep cleaned fermentation tank, with a sheet placed over the cherries and they're then submerged in cool water.

The sheet being placed over creates a vacuum on the coffee and an anoxic environment, allowing fermentation to begin - this lasts for 48 hours.
