Lao Wang is the founder of Red Dragon Estate. His parents had fond memories of the coffees from Baoshan, which inspired him to return back to the region with the hopes of learning more about coffee production.

Through much education and dedication, Lao has come up with several innovative techniques to improve cup quality for Yunnan's Catimor varieties.

For this lot, 80% of the fruit mucilage was retained and the beans were dried in partial shade and partial sunlight. The retention of the mucilage enhances the bean's composition during processing, locking in the natural sweetness without the taste of the fermentation.
