Donevi, another triumph from our partners Mió. Using the same processing technique as our birthday coffee - Acime. The coffee cherries are fermented in small mounds, covered for 72 hours using Saccharomyces Cerevisiae as a starter yeast. Then, dried for 3-7 days on a patio, 4 days in a dehumidifying dryer and 5-8 days in a rotating dryer.
The result is a wonderfully clean cup, full of subtle complexity that shines in filter and espresso.
