Pedro Joel Fiallos is the owner of Fiallos, a 28 hectare farm in Honduras in the Monte del Virgen area of Corquin, Copan. Pedro has a wealth of experience in coffee, having started his journey picking and pruning on farms, saving money so that he could buy his own farm. He bought a half hectare plot when the time was right and has gradually acquired more and more so that he can make a good living from coffee. Pedro is also one of the founding members of the Aruco Cooperative, providing assistance to other producers.
The harvest this year was extremely difficult due to increased rains and a lack of pickers, this meant a large amount of coffee was lost. This coffee was processed at the Aruco mill, where a decision is made on what process will be used. This coffee was placed in barrels to be macerated for 90 hours. Then, it was taken to drying beds for 20-30 days.
